From Jacquie's Kitchen: High Fibre Protein Bread

Sometimes, we just want something hearty and dense that we can dip, or cover in our favourite butter and jam.


This High Fibre Protein Bread is just that. Packed full of nutrient dense nuts and seeds, and high protein eggs and cottage cheese, this is guilt free way to indulge. Serve this bread with almond butter and strawberry jam, or slather it with some grass-fed butter and dip it into a soft boiled egg yolk. We loved this recipe for our Lunch and Learn: Yoga Sampler; it was the perfect bite after the yoga class, nourishing and satisfying.

Recipe Ingredients

Here's what you need:


  • 500g /5 cups rolled oats,

  • 5 tbsp chia seeds

  • 3 tbsp flaxseed meal

  • 1 tablespoon almond meal

  • 5 tbsp sunflower seeds

  • 5 tbsp pumpkin seeds

  • 1 tsp salt

  • 1 tsp baking powder

  • 750g/ 5 cups minus 2tbsp cottage cheese

  • 5 large eggs



What You Gotta Do:

Preheat your oven to 350F.


Mix all the dry ingredients together in a bowl. Add in the cottage cheese and eggs and stir to combine. The dough should be able to come together and be molded into two loaves.


Place your loaves on a baking sheet, and place in the oven for approximately one hour. Ovens vary, so watch your bread! Add ten minutes at a time if your loaves are too wet. If they start to brown before cooking through, lower the temperature slightly or cover loosely with tin foil.



Once out of the oven, let the bread cool before cutting. Serve with your favourite butter, nut butter, or just munch it on its own. Take a picture and share it with us here or on Instagram, or leave a comment with how you chose to serve it!
