From Jacquie's Kitchen: Spicy Baked Chicken Thighs

Spring is on the way and we are ready for some bright flavours! We love this quick and easy recipe for a high protein weeknight dinner. These leftovers are even better the next day, so make extra and have lunches ready for the week!
Ingredients:

12 chicken thighs
2 tbsp chili powder (adjust for spice level)
2 tbsp onion powder
1.5 tbsp garlic powder
1 tbsp ginger powder
1 tsp chipotle powder
1 tsp sweet paprika
1 tsp cumin powder
1/2 tsp cinnamon powder
Salt and pepper to taste
Olive oil
Instructions:
Preheat oven to 380°F (193°C).
Wash and pat dry the chicken thighs.
Mix all dry spices together in a bowl.
Rub the spice mix onto the chicken, then drizzle with olive oil (about 2 tablespoons) and mix well for the spice to stick to the meat. Let sit for 30min
Place chicken on a pan and bake for 20 - 25 minutes.
Reduce the temperature to 350°F (175°C) and bake for an additional 15 minutes or until internal temperature reaches 165°C.
Enjoy this flavourful chicken with quinoa, rice, or your favourite mixed green salad.
