From Jacquie's Kitchen: Spicy Baked Chicken Thighs

Spring is on the way and we are ready for some bright flavours! We love this quick and easy recipe for a high protein weeknight dinner. These leftovers are even better the next day, so make extra and have lunches ready for the week!


Ingredients:

spoonfuls of spices

  • 12 chicken thighs

  • 2 tbsp chili powder (adjust for spice level)

  • 2 tbsp onion powder

  • 1.5 tbsp garlic powder

  • 1 tbsp ginger powder

  • 1 tsp chipotle powder

  • 1 tsp sweet paprika

  • 1 tsp cumin powder

  • 1/2 tsp cinnamon powder

  • Salt and pepper to taste

  • Olive oil


Instructions:

  1. Preheat oven to 380°F (193°C).

  2. Wash and pat dry the chicken thighs.

  3. Mix all dry spices together in a bowl.

  4. Rub the spice mix onto the chicken, then drizzle with olive oil (about 2 tablespoons) and mix well for the spice to stick to the meat. Let sit for 30min

  5. Place chicken on a pan and bake for 20 - 25 minutes.

  6. Reduce the temperature to 350°F (175°C) and bake for an additional 15 minutes or until internal temperature reaches 165°C.
